Bangin' Banana Bread Recipe

Let me start by saying- I was never a huge fan of banana bread. #truestory
But multiple facets of my recent life have conspired to convince me that I should attempt a few recipes and see if my picky self and even pickier children might actually like banana bread after all!
Turns out the answer is a resounding YES! (But it took a few attempts to get there, haha!)
This is the BEST Banana Bread I have ever tasted in my life. Yum!!
Here's the recipe that we all ended up loving!

Ingredients:
1-3/4 cups unbleached flour
1-1/4 cups sugar
1 heaping teaspoon baking soda
2 large eggs, room temperature
2 medium ripe bananas, smashed
1/2 cup olive oil or oil of choice
1/2 cup whole milk (you may substitute buttermilk, coconut milk etc)
1 teaspoon vanilla extract
1 cup chopped walnuts
1 cup semi sweet chocolate chips (optional)
Additional chopped walnuts with 1/2 teaspoon sugar mixed in (optional)
Directions:
1: In a large bowl. stir together flour, sugar and baking soda.
2: In another bowl, combine the eggs, bananas, oil, milk and vanilla.
3: Add the banana mixture to the flour mixture, stirring just until combined.
4: Fold in nuts and chocolate chips if desired.
5: Separate and pour into 2 greased 9" x 5" loaf pans.
6: Bake at 325 degrees for 1-1/4 to 1-1/2 hours or until toothpick comes out clean.
7: Cool on a wire rack.
8: Eat up!!!
Note: I love sprinkling a little extra crushed nuts and sugar on top for extra texture and crunch. I recommend doing this after your banana bread has been in the oven for 30 minutes so they don't sink to the bottom!
